For many years I would visit my friend Heather and her family on Christmas Eve.  Heather lived with her grandmother, Helen.  Every Christmas Helen would bake these really delicious ginger-molasses cookies and for several years I asked her for the recipe.  Helen was a very modest lady and always downplayed how amazing these cookies really were.  One day, Helen shared her cookie recipe with me, and although this wonderful lady passed away several years ago, it is a tradition to bake several dozen these amazing cookies every Christmas and share with friends and family.

Helen’s Molasses Cookies

3/4  Cup Shortening
1 Cup White Sugar
1 Egg
1/4  Cup Molasses
2 Cups Flour
2 teaspoons Baking Soda
1/2  teaspoon Salt
1 teaspoon Cinnamon
1 teaspoon Ground Cloves
2 teaspoons Ginger
1/4  teaspoon All Spice
1/4  teaspoon Nutmeg

Directions:
  • Cream Shortening, add Sugar, Egg and Molasses.
  • Sift Flower, Soda, Salt, Spices and add to cream mixture.
  • Roll into small balls and places on a greased cookie sheet and press with fork.  Sprinkle with Sugar.
  • Bake 12 – 15 minutes in a 350 degree oven.  DO NOT OVER COOK.
  • Let cool a few minutes before removing cookies from sheet.

Tip: Use Parchment Paper and bake on an air bake cookie sheet instead of grease.
Use unrefined sugar to sprinkle on the cookie tops before baking.
Under cook for a softer and slightly chewy cookie.
